What Is Yangzhou Fried Rice?
Yangzhou fried rice or Yeung Chow fried rice is a popular Chinese-style wok fried rice dish in many Chinese restaurants throughout the world. The ingredients vary, but some of its staple items include: cooked rice, cooked shrimp, diced char siu pork, spring onions, carrots, peas, corn, bamboo shoots, eggs and even crab meat. Ingredients:
- 1 tablespoon garlic, chopped
- 3 tablespoons green onion, chopped
- Chinese sausages, chopped finely
- 1 tablespoon of dried shrimp, chopped finely
- 2 large eggs, beaten
- 2 tablespoons vegetable oil
- 4 cups rice, cooked
- 2 tablespoons of light soy sauce
- 1 cup green peas, frozen
Directions
In a hot wok, pour in the oil and swish it around to make sure the pan surface is fully coated. Place the egg on the pan and move pan around to make a very thin layer of cooked egg. Set aside. Using the same pan, put garlic and green onions. Sauté until fragrant but do not let them turn brown. Add the Chinese sausages. then follow with the rice, green peas, and egg. Season with soy sauce. Finally, serve it steaming hot and enjoy!
