Any time is a great time for a barbeque, especially with these side dishes. We all know that the star of the show is the meat at a barbeque but you can steal a bit of that limelight away with a fabulous side dish. The trick is trying to make tasty side dishes that are also healthy and easy to make. No one has time to spend hours in the kitchen making a side dish!
So what are our favourite go-to side dishes? We are not posting these in any specific order. We are not linking to specific recipes as many of these do not even require a recipe. Though you can certainly find recipes for them easily online if you like.
Kale Salad – this classic can be fresh, vibrant and packed with flavour. Add your favourite veggies, we love it with green onions, cherry tomatoes, cucumbers and peppers. Massage the kale leaves with a vinaigrette the night before to help them soften and feel good about your next summer outing.
Fresh Corn Salad – We love this! Add fresh or grilled corn with some sliced summer squash, zucchini, cherry tomatoes and potentially some crisp peppers. This is great as is or tossed with a light vinaigrette the night before. Add fresh chopped parsley and basil right before serving as well as maybe chives or thinly sliced red onion.
Pesto Green Bean Potato Salad – Toss freshly steamed green beans & gold potatoes that have been cut into bite sized pieces (before steaming) with a good pesto sauce for a super simple, fast, fresh, and healthy potato salad that everyone is going to love.
Grilled Plantains – These are great for sweet and savory dishes. For ripe plantains brush with a honey glaze or green rub with spices and serve with salsa or your favorite dip. Baked plantain chips are also a great option. They go well with most any dip and offer a healthy chip option for those who are health conscious.
Grilled Veggies – A classic standby. Marinate your veggies to get the most out of this side dish. Get creative and add a lot of options, onions, summer squash, egg plant, zucchini, tomatoes, potatoes, and mushrooms. Sprinkle them with fresh cut herbs after grilling for some added freshness to this side dish.
Now, you will be able to throw together an entire party in no time and enjoy a healthy get together.
