Capitol ChopHouse’s goal is simple, to create a collection of fine steakhouses which infuse local freshness with simple yet elegant cuisine in a refined and comfortable atmosphere. Their cellar list will impress your inner wine critic, but their selection of by-the-glass options will tempt you to experiment with new vineyards and varietals. At Capitol ChopHouse, you will taste hand selected steaks that are personally sourced from farms of the Midwest. All of their steaks are prepared on a open-hearth grill and prepared with custom blend of seasoning and finished with maître d butter. Their seafood is flown in fresh from the coasts daily and we only source the freshest locally grown produce whenever possible.
